I need to start trying to purchase duck from the grocery store. Most of the time I just get duck pre-cooked in the form of Peking duck. I always forget about it as an option in the store and go straight for beef and chicken. I even neglect pork. Such a shame.

I need to get more adventurous with duck.

Pork is nice but can be plain but roasted and served with some apple sauce is great.

Also pork medallions (tenderloin cut into half inch slices), lightly fried, set aside then small chestnut mushrooms fried in the pork fat, a touch of cream, garlic and seasoning, then re-add the pork and pour mixture into a small dish. Then with some filo pastry rolled out thin and cut into one inch or so squares, scrunch it up and then place on top of the dish, a light spritz of olive oil and a dust of herbs to dress and then cook for 20 minutes in the oven or until the filo starts to brown.

Also, pork belly roasted, then sliced, served on top of steamed rice and some hoisin sauce is lovely.

Looks great. Looks juicy and tender.

Which is great duck. It’s like you keep gently chewing (not because it needs to be) it to savour it and extract all the amazing flavour from it. Nom.
